CHEESE AND PINE NUT PIE

Quantities fot 1 26cm/10in
Pie:
300g/10oz frzen puff pastry
8 prereved vine leaves
1 leek
1 garlic clove
200g/1oz feta cheese
3 eggs
200g/7oz low fat curd cheese
100g/4oz full fat soft cheese
1 tbsp capers
½ tsp salt
Butter for the pie dish
Preparation time:
40 minutes
Baking time:
50 minutes

Analysis per piece,if divided into 12 slices,approx:
·        1000kj/240kcal
·        11g protein
·        17g fat
·        11g carbihydrate
Defrost the frozen puff pastry,Wash the vine leaves and pat them dry on kitchen paper,Chop the leek,finely chop of pastry one on top of the other  and roll them out to the shape of of the quiche dish.
Line the dish with the pastry and arrange the vine leaves on top,Work the feta cheese paste with the eggs,curd cheese,soft cheese,capers,salt,garlic and chopped leek.
Spred the mixture onto the vine leaves and sprinkle on the pine nuts,bake on the center shelf of a preheated 200/400/gas mark 6 oven for 50 minutes; serve hot or cold.
